February Sample Bite of Washington


I thought it might be fun to feature small samples of my cookbook, bite of Washington. It is available on Amazon for $10 print and $4 Kindle. The book starts with a brief description of Washington's climate and culture. It then takes you through the main types of apples grown in our state (our biggest food find). Then each chapter travels month by month, highlighting 5 food festivals and 3 recipes for each of them. Some recipes are donated by professional/local chefs. The entire books has delightful photos from around the state.

Pairing Wine and Chocolate
Do chocolate and wine really mix? Most people believe chocolate goes with anything, and if you pair correctly, wine it a perfect mate to chocolate. The number one rule in pairing these two, is that the wine should be as sweet or sweeter then the chocolate. Otherwise, both will sour.

White chocolate goes with Sherry, Moscato, Muscat, or Champagne
Milk chocolate goes with Pinot Noir, Merlot, Rieslings, dessert wines, Chardonnay
Dark chocolate goes with Zinfandels, Cabernet Sauvignon or Port
